Can I also drive via Austria (Brenner)?

Yes. In that case you swap the Swiss vignette for the Austrian vignette plus the Brenner toll. Check both routes in the checker and compare.

How do tolls work in Italy?

Per stretch at toll gates (cash, card or Telepass). No vignette needed; low-emission zones (ZTL) in cities are something to watch out for, though.
